The counter where Mr. Mitsukawa stands can be reserved for 4 to 9 people, and if you are traveling with 3 to 4 people, we will prepare face-to-face seats using the corner. Private room counter (4-9 seats)

The 300-year-old Japanese cypress private room counter with a pleasant scent is on the left side of the store. It can seat from 4 to 9 people. The usual Hours required is a 90-120 minute pace for the dinner course. It is also possible to nominate a gripper.

Counter (11 seats)

If you use the counter corner, you can have a face-to-face meal for up to 4 people. Mr. Mitsukawa is also familiar with serving customers in English. We will answer as much as possible about the name and season of the fish, such as how to eat sushi. Reservations can be made by Tel or HP.

PICK UP

Born in Yamaguchi Prefecture, he trained at a famous restaurant in Edomae, Tokyo, and then stayed in Germany as a sushi chef. In 2005, he opened "Mitsukawa Sushi" in Kanazawa and became a Michelin star.

The material is purchased from Kanazawa, Toyosu, Hokkaido, Yamaguchi, the hometown of the shopkeeper, and so on. Mitsukawa devised the style of chopping "red squid" and adding shiso.

The specialty "Hand-rolled Nodoguro" involves roasted Nodoguro and Kaga lotus root soaked in sweet vinegar. The fat of the nodoguro and the sourness of the lotus root are exquisite.

Speaking of Kanazawa, crabs. If you visit during the winter season, you should definitely try the "Hand-rolled Kano Crab" (December 8th to March 20th) and the barrel crab leaflet (November 7th to December 31st). There are three major Mitsugawa specialties, including "Hand-rolled Nodoguro" (year-round). Please enjoy with the technique that maximizes the performance of the fish. The Omakase course offers a wide variety of snacks, and the vegetable menu using Kaga vegetables is popular with female guests. We offer famous sake from all over Japan, centering on local sake from Kanazawa. The original sake carefully selected by Kanazawa's sake brewery and Fukumitsuya Mitsukawa is also delicious as a sake that enhances the flavor of sushi. The wines are mainly from Burgundy, France, and we have a selection of wines that go well with sushi carefully selected by the sommelier.
