「彫琢復朴」とは荘子の言葉。技術や工夫を磨いた先にあり、普通で飾らない朴こそが本物であると説いています。この思想を、料理の表現において探求するために「ふくぼく」は生まれました。素材を生かすのは日本の文化。いい材料が手に入ったときは、パッと塩だけ、サッと醤油だけで食べたいと誰もが思うでしょう。事実それがおいしいのですが、いい材料があれば雑でいいということではないと思います。料理のつくり手は、いい材料が手に入ったときこそ、温度、切り方、蒸し方、盛り付けに気を配ります。食べる人の気持ち、体調、季節に合わせて塩梅を加減します。それは家庭の料理も一流の料理も同じです。日常の材料、日常の食事の中で素材を生かすために心を砕いてきたことに文化の奥域を感じます。全国各地から最高の食材を直送し、野菜、魚、肉など素材の良さを感じていただくために、香りや色、ほんのりとした渋みや苦み、さまざまな素材の濃淡、強弱を引きだすことが多様性であり技だと思います。そこに自然への感謝の気持ちが生まれます。大切にするのは優しさと心地よさ。食と文化・心はつながるもの。「ふくぼく」の心をお持ち帰りいただければ幸いです。
